The most prized and valued of all truffles! Aroma so pungent and garlick-y with hints of cheese and earth, that its undeniably intoxicating. Knobby with a smooth exterior and firm flesh that is from cream to chestnut colour with white marbling. Enjoy this white truffle purely raw atop simple dishes and complements wonderfully with butter. Cooking it will lose more aroma.

BURGUNDY TRUFFLES

Names: Black Burgundy Truffle, Truffe de Bourgogne, Uncinato, Tartufo Nero di Fragno.

Species:Tuber Uncinatum

Season: September - November

Coarse exterior and dark brown interior with intricate tan veins. Fragrant, woodsy and deep hazelnut aromas. A cousin of the Summer Truffle.`
