The Japanese Meat Grading Association properly grades the beef to protect its quality, integrity, and authenticity. Wagyu Beef carcasses are graded between the sixth and seventh rib. Grading is based on two, very specific factors: Yield and Grade. The Japanese beef grading system has 5 quality grades; marbling, meat colour and brightness, firmness and texture of meat, colour, and the luster and quality of fat. In order to qualify as A5 Japanese Wagyu, beef must be graded as Grade A for Yield and Grade 5 in BMS, BFS, BCS, firmness and texture. This is the highest grade achievable and only the finest of all Japanese Wagyu is graded A5.
